Do large websites need someone taking care of the servers and web content 24/7?

Not Google or Facebook, but something like Biblegateway.com? I only ask because this is a religious problem I have in that I'm not to have anyone work for me or because of me on the Sabbath. I'm just wondering how big a website needs to be to have someone constantly monitoring it.
