How does Verizon know that the data coming from my phone is instead a laptop tethered to my phone with a usb-c cable? (or bluetooth & wifi?)

I went full time RV expecting to have unlimited data for my laptop because of my unlimited data plan with no throttling after a certain amount.

I know we used to be able to do so not that long ago (was it really that long ago?)
